Concurrent Field Experiences
The first types of Public Health Nutrition field experiences are completed
concurrently in conjunction with Community Nutrition I and II courses
(NTR 513 and 514, respectively). Students work with Public Health
Nutritionists at the Knox
County Health Department, which is a comprehensive, metropolitan
health department. In Community Nutrition I, students visit a variety
of agencies and organizations and observe how public health nutrition
is practiced. They get a “taste” of the opportunities
available to them in the real world. In Community Nutrition II, students
plan, implement, and evaluate programs that benefit the local community
under the supervision of the Knox County Health Department Public
Health Nutritionists.
Examples of past projects include surveying area hospitals on breastfeeding policies and practices, developing a diabetes nutrition education program for the Latino population in East Tennessee, and participating in the assessment of the region wide East Tennessee 2-Step Healthy Weight Initiative.
